Banana Tahini Cake with Miso

Tips
- Measure the amount of Banana carefully. Too much and the cake will
not rise.
Ingrdients
Cake
- 2/3 cup mashed ripe banana (2 small bananas)
- 1 large egg
- 1 teaspoon vanilla xtract
- 2/3 cup / 135g brown sugar
- 4 tbsp / 65g tahini
- 3 tbsp / 42g unsalted butter, melted
- 1/2 cup / 130ml milk
- 1 1/2 cups / 180g all purpose flour
- 2 tsp baking powder
- 1 tsp ground cardamom
- 1/4 tsp ground cinnamon
- a pinch of salt
- 1 tbsp sesame seeds
Frosting
- 7oz / 200g cream cheese
- 2 tbsp / 28g unsalted butter
- 1-2 tbsp red miso
- 1 cup confectioners’ sugar
- 1 teaspoon vanilla extract
Instructions
Cake
- Mash the bananas in a large bowl
- Add the egg, brown sugar and vanilla and mix well
- Add the melted butter, tahini and milk. Whisk until fully
combined.
- Sift in the flour, baking poweder, cinnamon, cardamom and salt. Mix
until just combined.
- Add to a buttered springform lined with parchment paper.
- Bake at 175° C for 35-40 mins.
- When cooled, add the frosting.
- Sprinkle the sesame seeds on top.
Frosting
- Mix the ingredients together.
