Better Baba Ganoush (Baigan Choka)

Instructions:

  1. broil eggplant, occasionaly turning, until skin is charred and plant is soft, about 1 hour. If using chili, broil chili as well, about 10 min. Let cool and remove flesh.
  2. Heat oils, add onion, Fry on high until slightly crispy.
  3. Blend everything together using a handblender.
