Better Baba Ganoush (Baigan
Choka)

Ingredients:
- 3 medium eggplants (about 1 kg)
- 1 mild red chili or squirt of good hot sauce
- 1/2 tbsp olive oil
- 1/2 tbsp neutral oil
- small onion thinly sliced
- 1 garlic clove, crushed
- chopped chives or chinese garlic chives
- salt (to taste)
- lemon juice (to taste)
Instructions:
- broil eggplant, occasionaly turning, until skin is charred and plant
is soft, about 1 hour. If using chili, broil chili as well, about 10
min. Let cool and remove flesh.
- Heat oils, add onion, Fry on high until slightly crispy.
- Blend everything together using a handblender.
